BUNNY BISCUITS

INGREDIENTS
4 oz (100g) butter
6oz (150g) plain flour
2oz (50g) light muscovado sugar
half a tsp. (2.5ml) ground cinnamon
Grated rind of one lemon
The yolk of one large egg
2-3 tbsp. Water currants and marshmallows to decorate

METHOD:

1. Preheat oven to 350F
2. Take a mixing bowl, mix flour and butter thoroughly till their appearance looks like fine breadcrumbs
3. Stir in the sugar, ground cinnamon and the grated lemon rind
4. Now Stir in the egg yolk and enough water to mix into a soft dough
5. Now on a floured surface knead the dough very well till it gets smooth then roll it out 0.5 cm thick
6. Now cut biscuits out of the dough in the form of rabbits
7. In a baking dish bake these rabbit biscuits for approx 15 minutes or until they turn pale golden color, then take it off the oven and place them on wire racks to cool down.
8. Once it cools down then decorate eyes with currants and use marshmallows to make its tail and you can do all little fixes with the help of Icing if needed

Amazing Coconut Pie

INGREDIENTS
2 c Milk
3/4 c Sugar
1/2 c Bisquick
4 Eggs
1/4 c Butter
1/2 ts Vanilla
1 c Coconut

METHOD
Take a bowl and mix everything except coconut mix it well with the help of a blender on low for just 3 minutes. Now pour this mixture in a Pie plate and let it sit there for approx 5 mins, meanwhile preheat the oven now just top the pie with coconut and bake it at 350 for approx 40 minutes.

Australian Grilled Fish

INGREDIENTS:
4 Fish steaks
1/4 c Lime juice
2 T Vegetable oil
1 t Dijon mustard
2 t Fresh ginger root –,Grated
1/4 t Cayenne pepper
Black pepper
*For the steaks: they should be 8-10 ounces and 1-inch thick each.
Use Swordfish, Halibut or Salmon steaks.

METHOD:

1. Marinate the fish for 45-60 minutes.

2. Now in a bowl, combine lime juice, 1 tablespoon oil, ginger,
cayenne pepper and little freshly ground black pepper according to your
taste.

3. Have the grill prepared with white coals and
brush the cooking grill with the remaining one tablespoon oil.

4. Grill the fish, brushing several times with the marinade, until
cooked through and opaque in the center. Turn fish after about 4-5
minutes. Total grilling time will depend on your griller. Now your Treat is ready.

Acorn Pie

Ingredients

3 egg whites, beaten stiff
1 tsp baking powder
1 cup sugar
1 tsp vanilla
20 soda crackers
1 (coarsley broken)
1/2 cup pecans, chopped

Directions
Beat egg whites until stiff now to the egg whites add baking powder and beat for some more time then add sugar and vanilla to it and then beat again. Fold in crackers and pecans. Now put this mixture in buttered pie plate and bake it at 300 degrees for 30 minutes. Take it out from the oven and let it cool and now top it with Whip Cream and chopped pecans

Fresh Fruit Pie

INGREDIENTS:

1 (9 inch) prepared graham cracker crust
1 cup white sugar
5 tablespoons cornstarch
1/8 teaspoon salt
1 1/2 cups cold water
1 apple, cored and diced with peel
1 banana, diced
1 (15 ounce) can pineapple tidbits, drained
1/4 cup chopped pecans
1/2 teaspoon red food coloring
1/2 teaspoon fruit preserver
1 1/2 cups nondairy whipped topping

DIRECTIONS:
In a heavy bottomed medium saucepan combine sugar, cornstarch and salt together. Pour the water into the cornstarch mixture and stir together over medium heat until it starts to boil. Continue stirring for about one minute till the mixture gets thick and clear in color now remove it from the fire and set aside till it cools down meanwhile mix together the apple, banana, pineapple and pecans in a medium bowl. Combine fruit with cooked mixture, adding food coloring and fruit preserver. pour into graham cracker crust. Cover and refrigerate for about an hour. Serve it with whipped topping and you can also garnish it with chopped pecans.

Coconut Bon Bons

Ingredients
3/4 cup of instant potatoes (2 servings cooked, but not seasoned)
1 teaspoon of almond extract
4 cups of flaked coconut
1 – 16 oz. package of powdered sugar

METHOD:
Stir together the instant potatoes, coconut, powdered sugar and almond extract, and mix it thoroughly. Now Refrigerate this mixture for 1 to 2 hours meanwhile melt a 12 ounce bag of semi-sweet chocolate chips and 1 / 3 of a bar of paraffin is in a double boiler. Shape the mixture of coconut into small balls/shapes and dip in melted chocolate. Lay it on greased paper until cool.

Ingredients

For The Turtles:
2 eggs
1 cup of flour
2 squares of chocolate
1/2 cup of margarine
3/4 cup of sugar
1 teaspoon of vanilla

For The Icing:
1/2 square of chocolate
1/4 cup of water
1/2 cup of brown sugar
2 1/2 tablespoons of butter
Powdered sugar

Process:

Melt 1/2 cup of margarine and 2 squares of chocolate together. Now Beat 2 eggs and add sugar to it. Fold the chocolate mixture into egg mixture. and then fold in 1 cup flour and 1 teaspoon vanilla. Drop by teaspoon on hot waffle iron (low). Bake 50 seconds. Cool and frost.

For Icing: Boil Water, chocolate, brown sugar and butter together in a pan for 3 mins and then take if off the heat and then slowly add powdered sugar until thick. Put on turtles. Sprinkle with ground nuts. For more information click here

Recipe Caramel Snappers

1 1/2 cups of pecan halves
25 vanilla caramels
1 tablespoon of margarine or butter
1/2 cup of semi-sweet chocolate pieces
1 teaspoon of shortening

METHOD:

Take a Shallow pan and spread pecans in a single layer. Bake in a 350 degree oven about 10 minutes or until toasted, stirring it occasionally as needed. Line baking sheet with foil and make sure to butter the foil. arrange pecans in groups of 3 and also make sure to keep the flat side down. In a heavy saucepan, combine caramels and margarine. Cook and stir over low heat until melted and smooth. Remove from heat and drop about 1 teaspoons melted caramel mixture in each group of pecans. Let it stand until it gets firm (about 20 minutes) meanwhile in a small saucepan heat chocolate pieces and shortening over low heat, stirring constantly until melted and smooth. Remove it from heat with the help of narrow spatula. Now spread a small amount of melted chocolate mixture over each piece of caramel. Let it stand until it gets firm. Remove from baking sheet and Store it an air tight container. It makes around 30 pieces.

Ingredients

1 lb. of white chocolate
1/2 cups of raisins
1/2 cup of almonds, chopped

Method

In a deep bottomed pan melt chocolate until smooth now add raisins and almonds to the chocolate mixture. Pour this mixture onto wax paper. This will be a thin candy. Let it cool then break into pieces.
